"La Compagnie Bretonne" mackerel is prepared at the peak of the season. Our mackerel is caught in the Celtic Sea, around Scotland and Ireland, and landed at the ports of Killybegs or Dingle, or sometimes in the North Sea. The fishing season runs from October to February. In these fishing areas, this is when the fat content is highest (minimum 20%).

Description

A high fat content guarantees the fish's tenderness when eaten. Upon arrival, the mackerel is cooked in a court-bouillon prepared with a bouquet garni. Once cooled, the mackerel fillets are trimmed with scissors and then carefully packed by hand. The sauces are prepared separately during the packing process and are then poured over the fillets before sealing.
