Serve at room temperature. Cut the bottarga into thin slices with a toothless knife to avoid damaging the eggs and gently remove the protective wax.

Enjoy the bottarga as a starter or as an aperitif, alone or with a slice of toasted bread drizzled with a dash of olive oil (fruity green).

The bottarga deliciously enhances your pasta, your risottos, scrambled eggs and awakens your summer salads.

A drink? Try it with a glass of Bandol rosé, or champagne or a shot of Boukha for the beginners (fig eau-de-vie).
